Organic Vanilla Bean Ice Cream

Discover how to make real vanilla bean ice cream with this delious recipe. The real vanilla beans are steeped in this custard that literally perfumes the ice cream releasing its aromatic flavor.

Makes about 1 quart


2 1/2 cups whole organic milk
2 vanilla beans
5 large organic egg yolks
2/3 cup sugar
1 cup organic heavy cream


Add milk to a medium saucepan. Halve the vanilla beans lengthwise with a knife. With your finger or knife, scrape the vanilla beans into the saucepan with the milk and add vanilla pod to the mixture. Stir and bring mixture to a simmer and steep for 30 minutes. Strain mixture, reserve milk and discard solids.

Combine egg yolks and sugar in the bowl of an electric mixer fitted with a paddle attachment. Beat on medium-high speed until very thick and pale yellow, for about 3-5 minutes. Return milk to a simmer.

Prep an ice water bath.

Temper the egg yolks by slowly adding half of the warm milk mixture to the egg yolk mixture while stirring constantly until blended. Add new mixture to sauce pan with remaining milk. Stir consistently over low heat until mixture is thick enough to coat the back of a wooden spoon.

Remove saucepan from heat and immediately stir in cream. Place an empty bowl over the ice water bath. Strain mixture through a fine mesh strainer into empty bowl and chill for at least 3 hours to overnight in the refrigerator.

Freeze custard in ice-cream maker according to the manufacturer’s instructions. Store in an airtight container in freezer until ready to eat.

The Family & Vision behind Mothers Organic

Typically our blog post consist of information on green & natural living, promotions, events, parenting and tons of other eco topics. Well it recently  dawned on me that we have never exclusively posted about the family behind the company and the reason in which Mothers Organic was started. My name is Kelly McKnight and I am the co-founder of Mothers Organic. If I were to sum up my title in short it would start with mother and wife. I have two beautiful children who are the main reason behind our store and brand Mothers Organic.  Back when my husband and I started contemplating having children I immediately fell in love with the idea of being a mother. I researched from day until night reading reviews, learning about products and ingredients all at which is what started my quest for eco-alternative living.

I was absolutely horrified with what I was learning. Was this true? Is this possible? Isn’t there a committee somewhere that regulates these things? I couldn’t begin to wrap my mind around the idea that very popular baby care companies were creating products that included toxic chemicals such as  formaldehyde.

Before my mission of becoming a mother I already was pretty familiar with organic and clean eating but that is where I drew the line. I had never really looked into the lotions, soaps and body care products I was using yet alone the same products that I would be using on my unborn baby once he had arrived. We learned a little each day and started sharing our favorite products with friends and family. And then the idea for Mothers Organic was born. We saw an opportunity to share our top picks with anyone who wants to choose a more eco lifestyle.

From what started as a place to keep my children safe from toxic ingredients we created Mothers Organic. We now have an amazing team who makes sure that all products in our online store must meet our strict criteria for eco-friendly and organic ingredients. We take pride in knowing that each and every Vendor & Product featured in our store has passed our 50+ Point evaluation process to insure that all products are safe for our customers and their families. Each product we feature must pass our evaluation process developed by our team here at Mothers Organic along with our expert health and safety advisory panel consisting of parents, pediatricians, environmentalist and of course our most important experts our own children. We also have a great team of eco-mama bloggers who make sure the products featured in our store continue to meet Mothers Organic’s rigorous standards.

We are beyond honored to be your one-stop shop for natural, organic and non-toxic living. Along this life changing journey of creating Mothers Organic we have met some amazing parents and business associates along the way and we are stoked that we are going into the new year with lots of new things happening here. We hope you are as excited as we are to introduce new brands, products and partnerships for you to Mothers Organic.

Family Travel Fun: Legoland and Four Seasons Aviara

Like you, we are always on the go with our kids. Whether it’s a walk to the local park or a family trip to a new town, we travel with kids in tow – taking our favorite on-the-go baby gear and travel accessories from the Mothers Organic store.

Recently, we had an opportunity to take a vacation in Carlsbad – just north of San Diego. We chose Carlsbad because it’s just a two-hour ride from our home in Los Angeles – and a short drive with two toddlers was a must – and we loved all the family-friendly activities available at Legoland California.

In particular, Legoland has lots of great options for toddlers. Many times we have taken the kids to amusement parks where they only have a couple of attractions geared for toddlers. Legoland has an entire area dedicated to toddlers – complete with rides, activities and a toddler park. The kids were able to explore, play, build and learn. In addition, there are ample areas to breastfeed babies and toddlers – including a designated nursing station complete with rocking chairs, privacy curtains and changing tables and other amenities.

A day trip to Legoland wouldn’t have been possible without our Pura Sippy Bottles and Zoli SUMO Snack Stackers. We were able to give the kids organic milk (we love the Stremick’s Heritage Foods brand) and snacks in these reusable containers – and they fit perfectly in our diaper bag.

After a full day at Legoland, we wanted to get some rest and relaxation at a hotel that was clean, comfortable, eco-friendly and suitable for families. We did a lot of research and decided to go with the Four Seasons Aviara. The reviews we read boasted of a villa style suite complete with kitchen, dreamy comfortable bed and welcoming staff. Let me first say that those reviews only begin to touch on the AMAZING experience of staying at the Four Seasons Aviara. The Four Seasons are known for their luxury hotels but never had we imagined that they were also dedicated to being family-friendly with the many available accommodations for their littlest of guest. From their baby sitting services to their separate children’s pool, the Four Seasons Aviara proved to be more than just a luxury hotel.

The staff was nothing short of phenomenal. Upon arrival, we were greeted with lemonade and warm towels to clean our hands. The front desk printed out local spots for us to enjoy that were family friendly. They even offered to make reservations for dinner if needed. Once we entered our room, we discovered the staff had more than prepared for our arrival. The kids were beyond excited to see there were personalized Legos for them to enjoy. Not to mention custom bath toys, an amazing fruit tray and personalized brownies for a sweet treat.

Another star component to our stay was the fact that everything was baby proofed, which stayed true to their promise of a “home away from home”. Being that we are a family dedicated to living as healthy and organic as possible, we were thrilled that there was a kitchen in our villa. We were able to pack our family favorites of organic milk, Happy Family treats and have the option to prepare our own dinner and breakfast.
